What is a broiler pan rack?
A broiler pan is a pan specially designed to use in the oven for broiling. It comes in two pieces, a slotted upper pan and a deeper, solid lower pan called a drip pan. Broiling allows food, such as meats, to be cooked at extremely high temperatures with a direct heat typically coming from above rather than below.
Can I use a cooling rack as a broiler pan?
But a cooling rack can also be used to heat things up. When you cook meat or vegetables on a cooling rack, it effectively functions as an oversized roasting rack, allowing the hot air to circulate evenly around the food. (To do this, of course, your cooling rack must be oven-safe. More on that below.)
Can I use any pan to broil?

It’s not strictly necessary to cook foods on a grated broiler pan. This pan allows air to circulate under the food, but you can accomplish the same effect by flipping the food partway through cooking.
Should you put water in the bottom of a broiler pan?
Some people recommend placing a small amount of water in the bottom drip pan prior to broiling to reduce smoking, and some pans are designed to minimize nuisances. Cooks can experiment with different versions to find one that suits their cooking needs.
Do you leave the oven door open when you broil?
The normal practice is to leave the oven door slightly ajar. This allows heat to escape and forces the broil element to stay on rather than cycling off and on. Open door broiling is good for when you are broiling for short periods of time, like cooking thinner meats, top browning or searing meat.
