Does US-05 need a diacetyl rest?
Lager yeast will continue to work only more slowly, so even without a D rest, given enough time the diacetyl will be consumed. The d rest is a short cut. By increasing the temperatures at the end of fermentation, the yeast will become more active and clean up the beer more quickly.

When to use us-05 vs.s-04?
Never got more technical than that. You’ll get more bready yeast flavor with the S-04 where the US-05 is more clean. You might try Nottingham as well. What’s the difference between US 05 and S-04 yeasts?
US-05 is at 1.010 (~5%abv). S-04,is at 1.015(~4.3%abv). The S-04 is much smoother and more floral. It drinks much easier. The US-05 is drier and more abrasive at this stage. Pretty much everything is as I expected, I just didn’t realize how stark the difference would be in flavours and color.
Is the us05 yeast a strong flucculator?
US05 is not a strong flucculator. There is clearly a lot of yeast still in solution in the US05 beer. This is just a visual representation of the flocculation properties of two different yeasts. If both beers were filtered, there would be no color difference in the finished beer.
