What is the Ripasso method?
“Ripasso” method is a unique technique that “re-passes” the Valpolicella wine onto the dried grape skins of Amarone, still warm and rich in sugar after fermentation. The Valpolicella wine remains in contact with the pomace of Amarone for 10/12 days; during this period, a second alcoholic fermentation occurs.
What is the Ripasso process?
Ripasso, sometimes also called double fermentation, is a method used to give more structure, body and flavours to the basic Valpolicella wine. At the end of January, beginning of February, the semi-dried grapes for Amarone and Recioto are squeezed and fermented together with grape skins.
Is Ripasso a grape?
Valpolicella Ripasso is a form of Valpolicella Superiore made with partially dried grape skins that have been left over from fermentation of Amarone or recioto. Winemaking in the region has existed since at least the time of the ancient Greeks.
What do you eat with Ripasso?
It has a good body, for this reason, pairing it with something super light such as fish, simple white meat or salad would be a mistake. On the contrary, it is very good with red meat, especially grilled or braised, since its good acidity balances perfectly its sweetish flavours.
